Recipe: Carrot Cake Pupcakes

It was Jonie’s 11th birthday this weekend, and to celebrate, we spent the afternoon baking these super adorbs Carrot Cake Pupcakes for his special day inspired by Kelsie & Cookie of The Itsy Bitsy Kitchen 💙 Enjoy!

INGREDIENTS (makes 24 pupcakes)

Carrot Cake Pupcake Ingredients

For the Cupcakes:

  • 1/2 cup ground flaxseed meal

  • 4 tablespoons brown rice flour

  • 2 tablespoons honey

  • 4 large eggs

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon baking soda

  • 1 cup finely shredded carrots

For the Frosting:

  • 1/2 package cream cheese at room temperature

Instructions

Cupcakes:

1) Preheat oven to 350 degrees.

2) Spray a 24-cup mini muffin pan with a (healthy) cooking spray and set aside.

3) Combine the flaxseed meal, brown rice flour, honey, eggs, cinnamon, and baking soda in a large mixing bowl and mix until smooth (it will seem pretty runny, but that’s okay).

4) Fold in the carrots and combine completely.

5) Fill each prepared muffin cup 3/4 of the way full.

6) Bake for 12-15 minutes.

7) Let cool completely before frosting (we put ours in the fridge for a bit).

Frosting:

1) If you’re feeling super extra, you can use a pastry bag with a star tip to pipe your cream cheese on top of each pupcake. Otherwise, just spread a little bit of cream cheese on top of each one with a knife.

2) Press a small pinch of shredded carrots into the cream cheese on top of each pupcake.

3) Sprinkle with a little bit of cinnamon & enjoy!

  • As you can probably tell from the photos, we lined our cupcake trays with mini paper liners (rather than spraying them with cooking spray). Although this worked awesome for getting them out of the tray itself, about half of the cupcake ended up sticking to the paper liner when we tried to peel it off. next time, we’ll probably try spraying the muffin pan instead.

  • After mixing everything together, the batter is going to seem oddly runny and grossly gelatenous, but don’t fret - it’s just the flaxseed meal doing it’s super gross and slimy thing.

  • With and without the cream cheese “frosting”, I found that these cupcakes were super sticky and was pretty cautious about Jonas choking on them (as usual). They would stick to the roof of his (and Fern and Ivy’s) mouths, making it difficult to chew. For smaller bb’s and puggos, I would recommend cutting the pupcakes up into bite-sized pieces before treating, or - like I did - ripping them apart with your fingers and giving them small pieces to chew at a time.
